Unicorn Meat Wellington

This is sure to impress your friends and family.

Level: Fairly easy

Serves: 2

Ingredients

2 Unicorn Meat patties

1-2 tbs oil

8 oz mushrooms, roughly chopped

1/2 shallot, roughly chopped

2 cloves of garlic

kosher salt and ground pepper

1/2 tsp thyme, minced

2 tbs vegan butter

1 sheet puff pastry

1 tbs vegan egg wash

Instructions

In a food processor, add the mushrooms, shallot, and garlic then pulse until finely chopped.

Heat a nonstick pan with 1-2 tbs of oil on medium high.

Add the frozen Unicorn Meat patties and cook until golden brown on both sides (about 2-3 minutes per side) then set aside.

Add 2 tbs of vegan butter to the pan and sauté the shallot, mushroom, and garlic mixture until the liquid has evaporated.

Add the minced thyme and season with salt and pepper.

Preheat your oven to 425 degrees.

On a lightly floured surface, cut the puff pastry sheet in half and slightly roll each half out.

Evenly spread the mushroom mixture on both sheets of the puff pastry.

Add the Unicorn Meat on top of the mushroom mixture and enclose the Unicorn Meat with the puff pastry. Trim ends if necessary.

Lightly brush with vegan egg wash.

Bake for 20 minutes.

Serve right away and enjoy!
